
Garlic & White Wine Steamed Hardshell Clams
YIELD: 2 entrées (foodservice portion
INGREDIENTS
2 lb hard shell clams
2 Tbsp olive oil
4 garlic cloves, sliced
½ cup white wine
½ cup seafood stock or water
2 Tbsp butter
Juice of 1–2 limes
1 tsp dried oregano
Pinch chili flakes
Salt and black pepper, to taste
2 Tbsp fresh parsley, chopped
DIRECTIONS
Heat olive oil in a wide pan over medium heat. Add garlic and cook until fragrant, not browned.
Add clams, white wine, and stock. Cover and steam 5–7 minutes, until clams open.
Stir in butter, lime juice, oregano, chili flakes, salt, and pepper. Simmer briefly to combine.
Finish with parsley and serve immediately.
