Chili Garlic Shrimp Stir-Fry

YIELD: 2 entrées (foodservice portion)

INGREDIENTS

8 oz long noodles (lo mein or spaghetti)

lb shrimp, peeled and deveined

Salt and black pepper, to taste

2 Tbsp neutral oil

3 garlic cloves, minced

1–2 tsp chili flakes

2 Tbsp soy sauce

1 Tbsp oyster sauce

1 Tbsp chili garlic sauce or sambal

2 tsp honey or brown sugar

1 tsp sesame oil

2 Tbsp reserved noodle cooking water

2 scallions, sliced

Lime wedges, for service

DIRECTIONS

Cook noodles in salted water until just tender. Reserve cooking water; drain and hold.

Season shrimp lightly with salt and pepper. Heat oil in a skillet over medium-high heat; sear shrimp 1–2 minutes per side until just cooked. Remove and hold.

Reduce heat to medium. Add garlic and chili flakes; cook until fragrant.

Stir in soy sauce, oyster sauce, chili garlic sauce, honey, sesame oil, and reserved noodle water. Add noodles and toss to coat evenly. Return shrimp and scallions; toss to combine.

Serve hot with lime wedges.
