Island Style Salmon Poke Bowl

YIELD: 1 entrée (foodservice portion) ​

INGREDIENTS

¾ cup cooked white rice (sushi or sticky), warmed

3 oz salmon poke cubes, chilled

3 oz tuna poke cubes, chilled

1 cup spring greens

½ avocado, sliced

1 Tbsp sesame seeds

2 Tbsp red onion, thinly sliced (optional)

Lemon wedges, for service

Soy sauce, for service

Fish sauce, a dash (optional, for authentic island flavor)

DIRECTIONS

Place warm rice as base in bowl.

Arrange spring greens, avocado, salmon, and tuna poke cubes on top. Add red onion if using.

Sprinkle sesame seeds over bowl.

Serve immediately with lemon wedges, soy sauce, and optional fish sauce on the side for seasoning.
